Simon Rimmer served up a delicious coffee tart with pistachios and flaked almonds on Sunday Brunch.
The ingredients for pastry are: 235g of flour, 85g of sugar, 110g of unsalted butter, cubed, 2 egg yolks and an extra beaten yolk.
For the filling : 90g of sugar, 425ml of cream, 8 yolks, 1 teaspoon of vanilla and 100ml of strong coffee.
Garnish with pistachios, flaked almonds and toasted walnuts and serve with pouring cream.
