Simon Rimmer served up delicious roasted vanilla peaches and granola on Sunday Brunch.
The ingredients are: 4 peaches, halved, leave stone in, 50g of honey, 1 tablespoon of vanilla paste, 75ml of water and 8 scoops of good quality vanilla ice cream.
For the granola: 200g rolled oats – roasted, 50g of chopped hazelnuts – roasted, 25g of chopped pecans – roasted, 25g of golden raisins, 30g of desiccated coconut, 25g of dried cherries, 150ml of maple syrup and 60ml of melted butter.
