Anna Haugh meatballs in tomato sauce with homemade pasta recipe on Anna Haugh’s Big Irish Food Tour

Anna Haugh and Bundee Aki served up tasty meatballs in tomato sauce with homemade pasta on Anna Haugh’s Big Irish Food Tour.

The ingredients for the pasta are: 400g semolina flour, plus extra for rolling out, 5g fine salt, 4 medium free-range eggs, whisked and 1 tbsp olive oil.

For the meatballs: 600g whole beef shin on the bone, 6 tbsp olive oil, 3 carrots, peeled and chopped, 2 celery sticks, chopped, 2 sprigs fresh thyme, leaves removed and chopped, 2 sprigs fresh oregano, leaves removed and chopped, 800g cherry vine tomatoes, halved, 1 onion, chopped, 500ml passata, pinch caster sugar, 1 banana shallot, chopped, 110ml full-fat milk, 45g porridge oats, 400g beef mince, 1 medium free-range egg, beaten, 50g gouda, grated, 1 lemon, zest only, salt and freshly ground black pepper.

To serve: 2 tbsp fresh oregano leaves and 100g gouda, grated.
