Simon Rimmer chicken thighs with charred tomato sauce recipe on Sunday Brunch

Simon Rimmer served up tasty chicken thighs with charred tomato sauce on Sunday Brunch.

The ingredients are: 12 skin on, boneless chicken thighs, 50g of butter and Peel of a lemon.

For the sauce : 1 onion, peeled and cut into 4 wedges, 12 Roma tomatoes, halved lengthways, 1 ancho chilli, soaked for 20 minutes, 2 cloves of garlic, 1 tin of chopped tomatoes, 250ml of chicken stock, 150ml of cream, 2 bay leaves and 50g of butter.

Serve with buttered long grain rice.
