Simon Rimmer served up a tasty aubergine with hummus and roasted chickpeas recipe on Sunday Brunch.
The ingredients are: 2 aubergines, cut into wedges, 1 tbsp of cumin seeds, 1 tbsp of smoked paprika, 2 cloves of sliced garlic, 100ml of olive oil and Salt and Pepper.
For the roasted chickpeas : 400g tin of chickpeas, 1 tbsp of cumin seeds, 1 sprig of rosemary, chopped, Salt and Pepper and 1 tbsp olive oil.
For the hummus: 400g of chickpeas (tin, drained but keep approximately 50ml of liquid), Juice and zest of 2 lemons, 1 clove of crushed garlic, 1 tablespoon of tahini and 125ml extra virgin olive oil.
