Simon Rimmer served up a delicious white chocolate fridge cake with chocolate sauce on Sunday Brunch.
The ingredients are: 500g of white chocolate, chopped, 30ml of coconut oil, 60g of freeze dried whole raspberries, 120g of chopped glace cherries, 100g of chopped pistachios, 100g of chopped dates (medjool), 75g of cornflakes and 8 large marshmallows, halved.
For the sauce: 150g of butter, 150g of milk chocolate, 25g of cocoa, 1 teaspoon of vanilla and Approximately 175ml of water.
