Paul Hollywood showcased delicious tear and share chilli cheese buns with chilli jam glaze for a technical challenge on The Great British Bake SU2C.
The ingredients for the buns are: 500g strong white bread flour, plus extra for dusting, 10g salt, 75g caster sugar, 10g instant yeast, 40g unsalted butter, softened, 2 medium eggs, beaten, 120ml warm full-fat milk, 120ml cool water, 100g extra mature Cheddar cheese, grated, 2 red finger chillies, de-seeded and finely chopped and oil, for greasing.
For the chilli jam: 50g red chillies, roughly chopped, 50g red pepper, roughly chopped, 350g jam sugar and 200ml white wine vinegar.
For the SUTC letters: 200g plain flour, 200ml water, Red food colouring paste, Orange food colouring paste, Yellow food colouring paste and Black food colouring paste.
