Marcus Wareing served up a tasty roasted Whole John Dory with pork fat, lemon, braised fennel and potato salad on Marcus in the Med: Mallorca.
The ingredients are: 2 fennel, with fronds and roots, 4 garlic cloves, Sprig of rosemary, Pork Fat or Olive Oil, 1 John Dory, gutted, 2 lemons, one sliced into rounds and one cut into wedges, Sea salt and freshly ground black pepper.
For the potato salad: 800g cooked potatoes, quartered, Handful of gherkins, chopped, 2 tsp capers and 2-4 tbsp mayonnaise (to taste).
