Marcus Wareing chop chop salad with feta cheese and pickled watermelon rind on Marcus In The Med: Mallorca.
The ingredients for the pickle are: 100ml cold water, 100ml white wine vinegar, 2 tsp honey, Pinch cloves, Pinch black peppercorns, Pinch sea salt, Few slices of ginger and 4 bay leaves.
For the salad: 1/2 large watermelon (or 1 x small watermelon), 1 small cucumber, cut into cubes, 3 green tomatoes, roughly chopped/cut into wedges, 1 red vine tomato, roughly chopped, 1 large heritage tomatoes, roughly chopped, 1 cos lettuce, sliced, 1 little gem lettuce, sliced, Small bunch of coriander, Salt and pepper.
To serve: Sea fennel, 200g feta, broken into chunks, Extra virgin olive oil, to drizzle and Lemon zest.
