Marcus Wareing served up a tasty chilled tomato soup with dressed crab meat, crusty bread and pickled cucumber salad on Marcus In The Med: Mallorca.
The ingredients are: 2 ripe plum tomatoes, chopped, 4 large heritage tomatoes, chopped, 100ml tomato juice, 1 tbsp tomato puree, 1 tsp smoked paprika, 30g toasted flaked almonds, 1 tbsp sherry vinegar, 4 thick slices white bread, sliced and crusts removed, Small bunch basil, chopped, Glug of extra virgin olive oil, Salt and pepper.
For the cucumber salad: 1 cucumber, finely sliced, 2 shallots, peeled and finely sliced (or 1 red onion), 2 garlic cloves, finely sliced, Salt and pepper, Glug white wine vinegar, 75ml olive oil and Small bunch of coriander, chopped.
For the crab: 100g white crab meat, 1 tbsp olive oil, Salt and pepper, Few slices of red chilli and Pinch of chilli flakes.
To serve: Few basil leaves, torn and Baguette slices.
