Michel Roux served up a tasty duck burger with wild mushrooms, tunworth cheese and smoked duck bacon Roux Down the River.
The ingredients are: 2 large duck breasts with skin, or 400g duck breast minced with the fat, 100g Vacherin or Tunworth cheese, 25g butter, 250g girolle or mixed wild mushrooms, 2 good quality brioche buns, 2 tsp Dijon mustard, Few leaves of your favourite lettuce and 1 smoked duck breast.
