Angela Hartnett served up a tasty chicken and leek pie with mashed potatoes using Simon Rimmer’s recipe on Sunday Brunch.
The ingredients are: 30g of pancetta lardons, 50g of butter, 30g of flour, 1 finely chopped leek, 1 clove of garlic, 2 chicken breasts, cut into large chunks, 50g of peas, A few sprigs of tarragon, chopped, 400ml of chicken stock, Zest of 1 lemon, 1 tablespoon of English mustard and 125g of crème fraiche.
For the pastry : 150g butter, cubed, 400g of flour, 1 egg, 60ml of iced water and 1 teaspoon of salt.
