Tim Lovejoy served up delicious oaty carrot and apple cake using Simon Rimmer’s recipe on Sunday Brunch.
The ingredients are: 200g of rolled oats, pulsed in the food processor until fine-ish, 1 teaspoon of baking powder, 250ml milk (can be any oat, almond or regular cow’s milk), 1 grated carrot, 10 dried apricots, chopped, 50g of raisins, 1 grated apple, 1 teaspoon of ground ginger, 1 teaspoon of cinnamon, 1 teaspoon of vanilla, 3 eggs, 70g of light brown sugar, 225g of Greek yoghurt, 1 teaspoon of vanilla and 1 tablespoon of ginger in syrup, finely chopped.
Drizzle with honey to serve.
