Gino D’Acampo makes lemon, courgette and fresh salmon pasta on Let’s Do Lunch with Mel.
The ingredients are: 1 tbsp olive oil, 2 spring onions, chopped, 100g salmon steak, skinned and pin boned and cut into 1 cm chunks, 50ml white wine, 1 courgette, cut into fine match sticks, Zest of 1⁄2 a lemon, 3 tbsp crème fraiche, 1 tbsp chopped dill and 125g favorite short fresh pasta.
To prepare the dish, bring a pan of salted water to the boil and place a large saute pan with a lid on the heat.
Add the olive oil to the sauté pan then add the spring onions and cubes of salmon. Fry for 1 minute then add the wine to the pan and cover with a lid. Steam the salmon in the wine for 1 minute.
Put the paste on to boil and cook for 2-3 minutes.
Remove the lid from the salmon and reduce the heat, squeeze over the a little lemon juice. Stir in crème fraiche and lemon zest. Add the courgettes and cook for 30 seconds. You want these to only just be cooked to give it a bit of crunch.
Drain the pasta reserving some of the cooking water. Add the pasta to the sauce along with a little water. Stir in the dill and season to taste. Serve.
