Gino D’acampo serves up a delicious looking spicy Thai prawn curry on Let’s Do Lunch for actress Jodie Prenger.
The ingredients are: 1 tbsp vegetable oil, 2 heaped tbsp massaman curry paste, I red chilli, finely chopped, 2 lemon grass stalks, bashed with the back of a knife, A few kaffir lime leaves (fresh or dried), 5cm piece of ginger, cut into thick slices, 2 x 400ml cans coconut milk, 200g new potatoes, cooked and halved, 400g prawns, shelled and de-veined, 1 -2 tsp brown sugar, fish sauce to taste, lime juice to taste, 250ml sticky rice / Jasmine, 500ml cold water, Salt and a few coriander leaves to garnish.
To prepare the dish, place the rice and water in a pan with a tight fitting lid.
Add a good pinch of salt then cover and simmer for 8 minutes or until the water has all been absorbed.
Turn the heat off and leave to steam for 10 minutes with the lid on.
Make the curry by heating a wok on a high heat. Add the oil then the paste to the pan and cook for 1 minute.
Add the chunks of ginger, lime leaves, bruised lemongrass and chilli, then pour in the coconut milk.
Simmer everything for 5 minutes allowing it to thicken slightly then add in the prawns and potatoes. Cook until the prawns are pink and cooked through.
Season the sauce with sugar, lime juice and fish sauce.
Serve with sticky rice, a scattering of coriander.
