Gino D’acampo showcase his delicios looking tomato tart tatin on Let’s Do Lunch with Mel and today’s guest Susie Perry.
The ingredients are: 5 plum tomatoes, 1 tbsp brown sugar, 1 tbsp thyme leaves, 2 tbsp olive oil, 20g butter, 2 tbsp red onion marmalade and 1 block of puff pastry.
To prepare the tart, cut the tomatoes in half then heat a 20cm frying pan on a high heat.
Add the butter and olive oil to the pan, then add the sugar.
Once hot, add the tomatoes into the frying pan cut side down. Leave them well alone, at this stage for 5 minutes to remove some of the moisture.
Roll the pastry out until it is the thickness of a £1 coin then cut a rough circle out that is slightly bigger than the pan.
After 5 minutes scatter with thyme then dot the top of the top of the tomatoes with the red onion marmalade then season really well with salt and pepper.
Place the pastry circle on top of the tomatoes and carefully tuck in the edges (the pan will be hot).
Place it in a pre heat oven at 200C for 25 minutes or until golden brown.
Make the basil oil by chopping the basil and garlic very finely then mix with olive oil. Season with salt and pepper.
Remove the tart from the oven and leave to cool for 5 minutes before placing a plate on top of the pan and inverting it. Sprinkle over a little salt and pepper then drizzle over the basil oil.
