Jamie Oliver served up a delicious mulled wine pear pavlova with, cream, chocolate sauce and toasted hazelnuts on Jamie Cooks Christmas.
The ingredients for the meringue are: 5 large free-range egg whites and 250g white caster sugar.
For the pears: 7 small, just-ripe pears, such as Comice or Conference, 750ml fruity red wine, 200g golden caster sugar, 1 star anise, 2 cloves, 1 x 1-inch cinnamon stick, 5 fresh bay leaves, 1 sprig of fresh rosemary and 2 clementines.
For the toppings: 300g quality dark chocolate (70%), plus extra for shaving, 1 large knob of butter, 50ml double cream, 2 tablespoons blanched hazelnuts or pecan nuts and 1 clementine.
For the cream: 200ml double cream, 2 tablespoons golden caster sugar and 2 teaspoons vanilla extract.
