Simon Rimmer served up tasty festive sausage casserole with pesto and garlic bread on Sunday Brunch.
The ingredient are: 1 sliced onion, 2 cloves of garlic, 1 tablespoon of red miso, 500ml of red wine, 2 teaspoons of chilli flakes, 2 tablespoons smoked paprika, 200ml of beef stock, A handful of kale, 1 tin of butter beans, 100g vacuum packed chestnuts and 12 good quality sausages, browned (a good traditional pork or a mixture of pork and beef).
For the pesto : 100g of well toasted hazelnuts, 1 bunch of basil, 200ml of olive oil, 2 cloves of garlic, Zest of 1 lime and 70g of grated veggie Parmesan.
Serve with garlic bread.
