Phil Vickery pork pot roast with sherry, carrots, peas and lime recipe

Phil Vickery served up a tasty slow cooked pork pot roast with sherry, carrots, peas and lime on This Morning.

The ingredients are: 2 tbsp olive oil, 3 large carrots, peeled and cut on long diagonals, 2 cloves garlic, peeled and chopped finely, 3 spring onions, roughly chopped, 3 tbsp fresh ginger, finely chopped, 1 kg fatty pork shoulder in 1 piece, rindless, 4 tbsp soy sauce, 250mls dry sherry, 4 tbsp Chinese hoisin sauce, 150g frozen peas (plus any other soft vegetables), Juice 2 limes, Freshly milled black pepper and Pinch table salt.
