Gino D’Acampo serves up a trout with chickpea salad dish on Let’s Do Lunch for Michelle Collins.
The ingredients are: 2 whole trout , scaled, gutted and cleaned, 2 tbsp olive oil, A few sprigs of rosemary, 1 lemon sliced, 2 oranges, cut into slices.
For the chickpea salad: 2 tins chickpeas, drained, 1 tsp cumin seeds, 290g jar of chargrilled peppers finely chopped, oil reserved, 1 stick of celery, 1 small red onion, Handful of parsley leaves, The juice of a 1-2 limes and Salt and pepper.
