Tom Kerridge served up a delicious apple pie with salted caramel and lattice topping on Tom Kerridge More Sunday Lunch.
The ingredients for the Pastry are: 400g plain flour, plus extra for dusting, 3 tbsp golden caster sugar, 250g cold butter, diced and 1 large free-range egg, lightly beaten with 2 tbsp cold water.
For the Salted Caramel: 200g caster sugar, 40g butter, 100ml double cream and 1/2 tsp sea salt.
For the Filling: 3 granny smith apples (eg Jazz, Braeburn or Pink Lady), 2 tbsp golden caster sugar, Juice of 1/2 lemon, 2 tsp vanilla paste, 1 tsp ground cinnamon, 3 tbsp plain flour, 1 tbsp cornflour, 1 lightly beaten egg (to glaze) and 2 tbsp demerara sugar.
