Simon Rimmer served up a delicious Margarita mousse with tequila and cream cheese on Sunday Brunch.
The ingredients are: 125g crushed digestives , 75g butter, melted , Zest 1 lime , 300g cream cheese, 150g mascarpone, 50ml tequila , Juice and zest 1 lime, 1 teaspoon vanilla, 100g sugar and 400ml whipped cream.
Granulated sugar and Lime wedges to garnish.
