James Martin makes warm salad with broad bean, mangetout, pea, roasted beetroot and mozzarella with blue Cheese dressing on Saturday Kitchen.
James says: “Sweet roast beetroot and creamy mozzarella blend with crunchy seasonal veg in a fresh healthy salad with herb dressing.”
The ingredients are: 4 heritage beetroots, cleaned and trimmed, 2 tbsp olive oil, 500g broad beans, podded and outer skin removed, 200g mangetout, thinly sliced, 200g fresh peas, podded, 50g baby spinach, 4 balls buffalo mozzarella, torn into chunks.
For the dressing: 30g French dressing, 30g honey, 30g white balsamic vinegar, 500ml vegetable oil, 5g shallot, finely chopped, ½ garlic clove, 1 tsp chopped basil, 1 tsp chopped thyme leaves, 1 tsp chopped chives and 1 tsp chopped parsley
