Tony Singh served up a delicious ghewar (Indian honeycomb shaped sweet with ghee, milk, ice, cardamom and sugar syrup) on Saturday Kitchen.
The ingredients are: 115g ghee, plus extra for shallow frying, 1 large ice cube or lump of ice, 300g plain flour, 1 tbsp gram flour, roasted , 200ml chilled milk, 2 tbsp lemon juice, 1 litre chilled water, 250g sugar and ½–1tsp ground cardamom.
To serve: peeled Iranian pistachios, slivered batons of Sicilian almonds and edible gold leaf.
