April Jackson served up a tasty spiced pumpkin soup with cheese toasties on This Morning.
The ingredients for the soup are: 750g pumpkin, peeled and chopped, Rapeseed oil, for drizzling, 30g butter, 1 onion, chopped, 6 garlic cloves, chopped, 1/2 scotch bonnet pepper (do not chop), Half bunch of thyme, 4 allspice berries, 1x sachet Grace Pumpkin Soup Mix, 500ml stock – ideally chicken but you can keep it vegetarian (you may need an extra 250ml stock if the pumpkin has little water content), 200ml coconut milk and Salt, to taste.
For the cheese toasties (quantities for 1 toastie): Butter, for spreading, 2 slices of bread, about 2cm thick, 50g Cheddar (or Gruyère), grated, 1 cornichon, chopped finely, Cracked black pepper, to taste and 45g mozzarella, thinly sliced.
