Simon Rimmer served up a tasty chicken tacos with guacamole and pink pickled onions on Steph’s Packed Lunch.
The ingredients for the onions are: 2 red onions, peeled and finely sliced, 1 tsp dried oregano, 5 whole black peppercorns, 3 limes, juiced, 1 orange, juiced and 2 tsp salt.
For the Guacamole: 2 large ripe avocados, 1tbsp olive oil, 2 limes, juiced and zested, 2 red chillies, chopped, ½ red onion, peeled and finely chopped and 1 tomato on the vine, skinned and chopped.
For the chicken tacos: 2 x cooked chicken breasts, shredded, 125g plain flour, 30g smoked paprika, 10g cayenne, 1 tsp thyme, 1 tbps salt and Vegetable oil, to deep fry.
To serve: 8 x soft corn 150mm tacos (tortilla wraps), 250g sour cream and 1 lime, wedged.
