Sisters Jasmine and Melissa Hemsley serves up beef ragù with courgettes and Flower power pizza on Saturday Kitchen Live.
Jasmine and Melissa Hemsley says about their beef ragù: “A richly flavoured low-carb meal of slowly braised beef in red wine sauce. If you don’t have a spiralizer to make the courgette spaghetti, use a peeler to make ribbons of courgette instead.”
The ingredients are: 2 tbsp ghee or butter, 2 onions, finely chopped, 2 garlic cloves, finely chopped, 2 dried bay leaves, ¼ tsp mixed spice, 2 tsp dried oregano, 400g beef mince, 100g chicken livers, trimmed and chopped, 250ml red wine, 14 large tomatoes, roughly chopped, or 2 x 400g tins chopped tomatoes or 800g tomato passata, 2 tsp tomato purée, 200ml bone broth or water, 2 large carrots, finely grated, sea salt and freshly ground black pepper, 1 large handful fresh parsley, finely chopped, 4 large courgettes, knob of butter, extra virgin olive oil and 100g parmesan, grated, to serve.
About the Pizza they say: “The power in this gluten-free pizza comes from the protein-rich almonds, egg white and buckwheat, while the ‘flower’ comes from the cauliflower used to make the pizza base. Try adding herbs and toppings of your choice.”
The ingredients for the pizza base: butter, ghee or coconut oil, for greasing, 140g cauliflower, 1 egg white, beaten, 50g ground almonds, 40g buckwheat flour, ½ tsp sea salt, ½ tsp black pepper and ¼ tsp bicarbonate of soda.
