James Tanner makes mozzarella lasagne with summer vegetable recipe on Lorraine.
The ingredients are: 1 large aubergines, 2 courgettes, 1 red pepper, 1 yellow pepper, Olive oil, Sea salt, Cracked black pepper, 3 diced banana shallots, 2 cloves of garlic, 1 tablespoon tomato puree, 50ml sherry vinegar, 2 can of whole plum tomatoes, 1/2 stick cinnamon, 4 sprigs of picked thyme, 4 tablespoons onion relish, 3 balls of sliced mozzarella, 12 whole basil leaves, 30g panko breadcrumbs and a handful of Parmesan.
