Theo Michaels tuna poke bowl recipe on Steph’s packed Lunch

Theo Michaels served up a tasty tuna poke bowl with vegetables on Steph’s packed Lunch.

The ingredients for the tuna are: 240g tuna steak, (60g per person) and 1tbsp each black and white sesame seeds.

For the sushi rice: 200g sushi rice, 300ml water, or just enough to cover by ½ an inch, 1 tsp caster sugar, Pinch of salt, 60ml white wine vinegar or rice vinegar and 1 tsp light soy sauce.

For the dressing: 125ml mayonnaise, 30ml sriracha, Squeeze lime and Pinch of salt.

To assemble the poke bowl: 1 carrot, peeled and grated, 1 lime, juiced, ½ cucumber, halved lengthways and finely sliced, 30ml white wine vinegar, Pinch of caster sugar, 240g mango chunks, cut into ½ inch cubes, 4 radishes, thinly sliced, Few sprigs fresh coriander, Few sprigs fresh mint and 1 red chilli, sliced.
