Jamie Oliver makes Moroccan style spiced beef tagine on Savings Meals that works out at £1.48 per portion.
Jamie says: “A rich, spiced tagine is definitely one of the ultimate stews, and served with couscous it’s a total pleasure to eat. What’s great about this recipe is it takes your leftover brisket and surrounds it with flavours that really can’t go wrong, giving you sweetness, spice and excitement. This is proper comfort food with a difference.”
The ingredients are: 2 red onions, 50 g mixed olives, stone in, 75 g dried apricots, 2 cloves of garlic, olive oil, 1 heaped teaspoon garam masala, 2 teaspoons ground cumin, ½ level teaspoon dried chilli flakes, 2 potatoes, 2 large ripe tomatoes, 1 x 400 g tin of chickpeas, 400 g leftover cooked brisket, 1 cube beef stock, leftover beef gravy, 250 g couscous, 1 orange, 2 carrots, 15 g fresh mint, extra virgin olive oil, balsamic vinegar, and fat-free natural yoghurt to serve.
