Simon Rimmer posh beans on toast with pickled onions recipe on Steph’s Packed Lunch

Simon Rimmer served up a tasty posh beans on toast with pickled onions on Steph’s Packed Lunch.

The ingredients for the pickled onions are: 2 red onions, peeled and thinly sliced, 1 lime, juiced , 2 oranges, juiced , 1tbsp dried oregano , 1tsp fine sea salt and 4 black peppercorns.

For the posh beans on toast: 2tbsp vegetable oil , 1 onion, peeled and sliced , 2 cloves garlic, peeled and chopped,
50g tomato ketchup , 1 ancho chilli, soaked in hot water for 10 minutes , 1tbsp smoked paprika, 1tsp ground cumin , 1tbsp Dijon mustard , 150g cherry tomatoes, chopped, 30g dark soft brown sugar , 100ml strong vegetable stock and 2 tins cannellini beans, rinsed.

To serve: Thick cut sour dough toast, buttered , 400g sour cream , 100g sliced Jalapenos and 150g cheddar, grated.
