Ainsley Harriott Celebration Berry and White Chocolate Mousse with Meringue Shards recipe on Ainsley’s Coronation Kitchen

Ainsley Harriott served up delicious Celebration Berry and White Chocolate Mousse with Meringue Shards for the coronation on Ainsley’s Coronation Kitchen.

The ingredients for the Meringue Shards are: 2 large egg whites, 80g caster sugar, 80g icing sugar, sifted, ½ tsp cream of tartar, 2 tsp freeze-dried strawberries and blue gel food colouring or 1 tsp blue sprinkles.

For the Mousse: 227g strawberries, quartered, 1 tbsp finely chopped mint leaves, plus extra sprigs to serve, 3 tbsp Pimm’s, zest of ½ lemon, 200g good quality white chocolate, broken into pieces, 300ml double cream, 200g mascarpone, ¼ tsp vanilla extract, 2 tbsp icing sugar, pinch of sea salt and 125g blueberries, plus extra to serve.
