James Martin served up a tasty Watercress Soda Bread with Watercress Butter and Watercress Soup on James Martin’s Saturday Morning.
The ingredients for the butter are: 200g butter, softened and 1 bunch watercress, blanched and squeezed out, chopped.
For the Soda Bread: 170g self raising brown flour, 170g plain flour, ½ tsp salt, 1 tsp bicarbonate of soda, 300ml buttermilk and 1 bunch watercress, blanched and squeezed out, chopped.
For the soup: 2 bunches of watercress and 1 ltr full fat milk.
To serve: Cream, Herb oil and Sprigs of watercress.
