Bikers Honey-glazed guinea fowl with pomegranate and pineapple on Best of British

The Bikers cook honey-glazed guinea fowl with pomegranate and pineapple on their Best of British foods series.

The Bikers says: “This recipe is certainly exotic – honey and five-spice chilli guinea fowl served with a fresh fruit salsa splashed with soy sauce. If you can source one, serve in a banana leaf to impress.”

The ingredients are: 1kg oven-ready guinea fowl, 2 tbsp sunflower oil, ½ tsp dried crushed chilli, ½ tsp Chinese five-spice powder, ½ tsp flaked sea salt, freshly ground black pepper, 1 large ripe pineapple, ½ cucumber, ½ large pomegranate, 2 tbsp clear honey, 1 tbsp dark soy sauce, 50g bunch fresh coriander, 25g bunch fresh mint, ½ small red onion, 1 large lime, juice only and banana leaf, to serve (optional).
