Simon Rimmer served up tasty Kale with King oyster mushrooms on Sunday Brunch.
The ingredients are: 50g golden raisins, 50ml Brandy, 50ml water, Large bunch kale, stalks removed, 2 granny smith apples, peeled and cut into small cubes, 75g broad beans (frozen are fine), 30g pine nuts, 1 teaspoon chilli flakes, 1 tablespoon smoked paprika, 4 king oyster mushrooms cut into thick slices from top to bottom, Oil to griddle and Garnish with orange zest.
