Nick Nairn Chicken Satay with Cucumber Salad and Peanut Sauce recipe on James Martin’s Saturday Morning

Nick Nairn served up a tasty Chicken Satay with Cucumber Salad and Peanut Sauce on James Martin’s Saturday Morning.

The ingredients are: 400g skinless boneless chicken thighs trimmed and cut into 1.5cm pieces, 1 cucumber, 1/2 red onion thinly sliced, Small bunch coriander, 1 lime, 1 red chilli, Chinese chilli oil, Small packet roasted peanuts and 1 tsp caster sugar.

For the marinade: 3 tbsp “jimmy’s” satay sauce, 1 tbsp light soy sauce, 2 tbsp kecap manis, 1 tsp fish sauce, 1 tbsp honey and Juice 1/2 lime.

For the sauce: 3 tbsp crunchy peanut butter, 2 tbsp light soy sauce, 2 tbsp brown sugar, 4 tbsp coconut milk and Juice of 1/2 lime.
