John Whaite served up a tasty minestrone soup with butternut squash on Steph’s Packed Lunch.
The ingredients are: 1 small butternut squash, peeled, cored and in 1cm cubes, 2tbsp olive oil, 50g unsalted butter, 1 onion, peeled and finely diced, 2 celery sticks, finely diced, 2 carrots, peeled and finely diced, 1 medium potato, peeled and finely diced, 2tbsp tomato purée/paste, 200g cavolo nero (black kale), shredded, 4 chicken/vegetable stock cubes, 2 litres hot water, 1 large pecorino/parmesan rind and 100g wholewheat lasagne sheets.
