John Whaite served up a tasty one pot meatballs with pasta dish on Steph’s Packed Lunch.
The ingredients for the meatballs are: 2 Cumberland sausages, 200g high-fat minced beef, 1 tsp fennel seeds, ½ tsp ground pepper and ¼ tsp fine salt.
For the pasta: 2tbsp olive oil, 1 small onion, very finely diced, 1 fat garlic clove, minced, 1 small red pepper, finely diced, 100g chestnut mushrooms, finely sliced, 100ml red wine/water, 1tbsp tomato puree, 300g spaghetti, snapped in half, 700ml boiling water, 3tbsp red pesto, 60g Parmesan cheese, finely grated and Small handful fresh basil, roughly chopped.
