Simon Rimmer served up a tasty one pot pork roast with potatoes, chickpeas and chorizo on Steph’s Packed Lunch.
The ingredients for the marinade: 100g soft light brown sugar, 100ml sherry vinegar, 50ml olive oil, 1tbsp smoked paprika, 2tsp sea salt and 1tbsp mustard powder.
For the Spanish style pork roast: 1 pork loin joint, string off and laid flat, 2 onions, peeled and sliced, 4 cloves garlic, peeled and sliced, 50ml dry sherry, 225ml chicken stock, Few sprigs thyme, 1 tin of chickpeas, 500g small potatoes and 200g chopped chorizo.
