Yvonne Cobb served up a tasty winter warming spiced coconut and lentil soup with flatbread on This Morning.
The ingredients for the paste are: 4 banana shallots, roughly chopped up, 2 thumb size ginger, roughly chopped up, 4 cloves of garlic, ½ tsp cayenne pepper, 2 tsp turmeric, 1 tsp cumin, 1 tsp ground coriander, 2 tsp ground paprika, 3 tbsp sesame oil and 1 lime juice.
For the soup: 1 tbsp coconut oil, 1 large brown onion, sliced, 1 red chilli, finely chopped, 4 tbsp paste (see above), 3 medium sweet potato, chopped up into inch size pieces, 100g red lentils, 2 tsp bouillon, 750ml hot water, 1 tin of coconut milk and 1 lime juice.
For the toppings: 1 chopped avocado, ½ tsp nigella seeds (lightly toasted), 1 chopped spring onions and Handful of lightly toasted cashew nuts.
For the flatbreads: 250g plain flour, 1 tsp baking powder and 1/2 tsp salt
250g full fat greek yoghurt.
