John Torode and Lisa Faulkner served up a delicious cardamom and pistachio cake with orange-scented cream on John and Lisa’s Weekend Kitchen.
The ingredients are: 115g self-raising flour, 1 tsp baking powder, 115g golden caster sugar, 2 tsp cardamom powder, 1 tsp ground cinnamon, 115g butter, plus extra for greasing, 2 eggs, 1 capful orange blossom, 1 tsp rose water, 1 tsp vanilla extract, 150ml soured cream, 75g pistachio nuts, shelled & chopped and 25g walnuts, broken up.
For the whipped cream: 70g double cream, 3 teaspoons vanilla extract, 1 tsp orange blossom water , 3 tsp icing sugar and the zest of one orange.
For the mint tea: Boiling water, 1 bunch of mint, bashed to release aromas and 2 tsp sugar.
