Simon Rimmer served up tasty roast potatoes three ways with cheese, burger sauce and a ranch dip on Steph’s Packed Lunch.
The ingredients for the roast potatoes are: 1kg maris piper potatoes, 125g duck or goose fat or lard or olive oil, 2tsp plain flour, sea salt and 2 sprigs rosemary.
For the cheesy potatoes: 150g of gruyere cheese, grated.
For the burger sauce: 200g mayonnaise, 40g ketchup, 40g yellow burger mustard, 3 gherkins, chopped, 20ml white wine vinegar, 2tsp cayenne, 2tsp smoked paprika and Pinch garlic powder.
For the green goddess ranch dip: 20g chives, chopped, 20g tarragon, chopped, 20g parsley, chopped, 1 green chilli, chopped, 300g mayonnaise, 100ml buttermilk and juice half lemon.
