Allegra Mcevedy served up a tasty creamy chicken pie with carrots and mushrooms on Steph’s Packed Lunch.
The ingredients are: A whole chicken, size dependent on size of your family, 2 fat carrots, peeled, 2 sticks celery, cut in half, down the entire length and then into semi circles, 1 onion, halved and peeled, 1 bulb of garlic, Whatever branch herbs you have around: bay, rosemary, thyme, 80g unsalted butter, 2 leeks, sliced and washed, 250g mushrooms, destalked, washed and quartered, 1 chicken stockpot tub, 40g plain flour, 1 pack shortcrust pastry, pre-rolled, An egg yolk + 1 tbsp milk, for egg wash, Salt and pepper.
To serve: Any seasonal vegetables.
