Theo Michaels served up a tasty microwaved chicken with ricotta and pancetta on Steph’s Packed Lunch.
The ingredients are: Pinch of chilli flakes, 50g tinned chickpeas, drained, 90ml passata, Pinch of smoked paprika, 6 rashers of pancetta or 3 sheets prosciutto, 3tbsp ricotta cheese, 1tbsp fresh thyme leaves, plus extra for serving, 100g/1 small chicken breast, skinned and whole, Salt and Pepper and 1tbsp of olive oil, to drizzle.
To serve: 1tbsp parsley or thyme leaves, chopped.
