Jeremy Pang served up tasty Malaysian chicken curry with coconut rice on Jeremy Pang’s Asian Kitchen.
The ingredients include: Chicken thighs and oil for frying.
For the chicken thigh seasoning: turmeric, curry powder, chilli powder, garam masala and salt.
For the curry sauce: onion, lemongrass, ginger, star anise, cinnamon stick, green cardamom pods, fresh tomatoes, tomato purée, chicken stock, coconut water, light soy sauce, palm sugar, pandan leaf and oil for frying.
To serve: coconut rice (rice cooked in coconut water and chicken stock).
