Ian and Henry (Bosh) tinned tomato soup and pasta recipe on Steph’s Packed Lunch

Ian and Henry (Bosh) served up a tasty tinned tomato soup and pasta on Steph’s Packed Lunch.

For the ingredients for the roast tinned tomato soup: 2 x 400g tins peeled plum tomatoes, 3 garlic cloves, 1 red onion, 2tbsp olive oil, 1tsp sugar, 1tbsp tomato puree, ½ tsp dried oregano, 600ml vegetable stock, Salt and black pepper.

For the croutons: 200g crusty bread, 2tbsp olive oil, ½ tsp salt, ¼ tsp ground black pepper and ¼ tsp dried oregano.

To serve: Olive oil, for drizzling.

For the roast tinned tomato pasta: 400g penne pasta and Fresh basil leaves, for garnish (optional).

For the pasta sauce: 2 x 400g tins chopped tomatoes, 2tbsp olive oil, 2tsp caster sugar, plus extra for seasoning, 1 red onion, 1 garlic clove, 1tbsp tomato puree, Salt and black pepper.
