Andrew Rudd makes a tarte tatin dessert served with brown bread ice cream on Late Lunch Live. Tarte tatin is a popular French recipe that is an upside-down tart, where the fruit is caramelized in butter and sugar before the tart is baked.
The ingredients are: 90g butter, 180g caster sugar, 5-6 dessert apples (Cox’s or Granny Smiths), peeled, cored and quartered, 1 shot (30ml) Aperol or similar liqueur, optional, 450g puff pastry and beaten egg mix, to glaze.
