Phil Vickery makes a fruit and honey cake with clotted cream in the This Morning Kitchen for national honey week.
Phil says: “This is my mother recipe made with lots of fruits that is for 10 to 14 people. It is very simple and quick to make. The cake is best left until the next day before eating to get the best flavour.”
For his cake Phil used just a few simple ingredients: A packet of dried fruit, sugar, honey, water, butter, mixed spice, bicarbonate soda, eggs, and self-raising flour.
