Simon Rimmer served up tasty slow-cooked jerk pulled pork with rice and peas on Steph’s Packed Lunch.
The ingredients are: 2kg pork shoulder, butterflied and most of the thick outer fat removed.
For the Jerk seasoning; 1 onion, peeled and chopped, 3 spring onions, chopped, 1 scotch bonnet chillies, de-seeded and chopped, 2 cloves garlic, peeled and chopped, 1tbsp 5 spice powder, 1tbsp all spice berries, ground, 1tbsp white pepper, 1tsp dried thyme, 1tsp freshly grated nutmeg, 100ml light soy sauce, 50ml vegetable oil, 3 onions, peeled and sliced, 200ml chicken stock.
For the Rice and Peas: 50ml vegetable oil, 1 onion, peeled and finely chopped, 300ml long grain rice, 500ml water, 400g tin kidney beans, drained and washed, 3tbsp fresh thyme, leaves removed and chopped and 400ml coconut milk.
To serve: 4tbsp coriander, chopped and Hot pepper sauce.
