Simon and David served up a tasty root vegetable traybake with sage and onion stuffing balls on The Hairy Bikers Go North.
The ingredients are: 300g carrots, left whole if slender, or cut lengthways, 300g celeriac, peeled and cut into wedges, 300g beetroot, cut into wedges, 2 tbsp olive or walnut oil, 2 red onions, cut into wedges, few sprigs thyme, 400g tin cannellini beans, drained and rinsed, salt and freshly ground black pepper.
For the sage and onion balls: 1 tbsp olive oil, 15g butter, 1 large onion, finely chopped, 1 tsp dried sage, crumbled, 1 lemon, grated zest, 150g fresh breadcrumbs and 1 free-range egg, beaten.
For the sauce: 150ml cider, 1 tsp Dijon mustard, 1 tsp redcurrant or apple or herb jelly, 1 tsp yeast extract, such as Marmite and 150ml vegetable stock, heated.
